Six years ago cheesecake wasn’t really a thing in The Netherlands. We had our own version made of quark that is set in the fridge. By now that version has been almost completely replaced by the baked cheesecake. I have to admit that I’m not that sad about this development. However, cheesecake is much more expensive to make. That is, if you use store-bought cream cheese. One time I put down €16,- to make just one cheesecake. Ridiculous. In my opinion. So I searched for a less expensive way to recreate my friends recipe. And it turned out that making it myself was the cheapest and tastiest option. To make your own cream cheese succesfully it is important to use organic full-fat yogurt. Other types of yogurt won’t work. The most expensive yogurt I have found was €2 for 1 liter, which makes about 400g of cream cheese. Which makes this almost four times more affordable than buying cream cheese at the supermarket. So. What are you waiting for?
