In my very first blog post I already mentioned that burgers always make me happy. Don’t wake me up for it, my sleep is too precious. But when I’m awake, you cannot go wrong with a burger. Matthijs and I share this sentiment towards burgers completely. So much so, that we even served burgers for dinner at our wedding. Therefore, what I’m going to tell you next might not come entirely as a surprise: we decided to start a project where we are going to come up with burgers based on flavours of the world. Presenting to you today a burger inspired by Italy. The starting point was our wedding burger, and with ingredients like eggplant, basil and parmesan it also reminds us of Italy. It has been a while since I came up with the recipe, and tested it, but it wasn’t quite there yet. I put too much salt in the pesto, which made the burger extremely salty. So be aware of the amount of salt you put in it. Last Sunday I made the burger again, tweaked the recipe a bit, and summoned Matthijs as my taste tester. It is really convenient to have one at home.
