As you might have read in the story I shared with the recipe for gooseberry mojito our gooseberry bush was a wedding present from my friends I met during my bachelors in theology. This year it gave berries for the first time, and it got very enthousiastic about it, so we had about one kilo of berries. Insert: more recipes with gooseberries. So I took my basic tart crust and filled it with elderflower syrup, many many gooseberries, and a little bit of sugar. That’s all. This tart is a little sweet and a little sour. But neither of these flavours are overpowering. Leaving you with a surprising satisfying aftertaste. I hope you enjoy it!
