behind the dots
I'm Hester, a photographer, writer, and chaplain-to-be.
When I'm not roaming the earth, I live in the Netherlands with my husband Matthijs, our four bunnies, and my book and plant collections. I hope you enjoy your time here. And when you have a question, like to share an idea, or just want to say hi, know that I'd love to hear from you, so don't hesitate to send me a message.
Welcome to my tiny corner of the world
where I share stories that tend to be overlooked
about the dots
why i started this blog
For me, cooking and eating have always been a way to connect with others. However, that has become somewhat complicated since I'm living with a list of foods I'd better avoid. So, I started this place as a way to share recipes that I am able to eat, and show the world that it is possible to eat flavourful meals while avoiding certain foods. Originally that list consisted of onions, garlic and mushrooms, but in recent years that list has somewhat expanded. I'd love for you to follow along on my journey to rediscover food. Although, I'd like you to keep in mind that a diet is something strictly personal. What works for me, might not work for you. Therefore, I encourage you to use the recipes I share as a framework and modify them based on your individual needs and preferences.
for the curious
Between the Dots started on 17 August 2016 as a place to collect recipes that don't upset my body. For myself. And to help others. To give some insight into the guidelines I follow while creating my recipes, here I share my list of the things I don't tolerate or only use in moderation. This list is strictly personal to me and just for reference.
The main reason why I started this blog, was to have a place to share recipes that taste good without relying on onion and garlic for flavour. Not an easy feat, since these ingredients are common in kitchens around the world. Moreover, it’s not as simple as just removing them. In this post I share a little bit about the science behind my list of food intolerances.
